Ingredients 

  • 2½ cups cauliflower florets
  • 1 large egg lightly beaten
  • 1½ cups freshly shredded mozzarella cheese divided
  • 2 tablespoons freshly grated Parmesan cheese
  • 1 teaspoon garlic salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon crushed red pepper flakes
  • 1 tablespoon chopped fresh basil leaves
  • ¼ cup tomato sauce
  • ¾ cup freshly shredded sharp cheddar cheese (see note)
  • 8 pepperoni slices
  • ¼ cup chopped cremini mushrooms chopped
  • 1 tablespoon chopped leeks

Foolproof Cauliflower Pizza Crust

Ingredients 

  • 2.5 pounds medium-large (6″ – 7″ wide) head of cauliflower , 2 x 12-16 ounces packages cauliflower rice or frozen cauliflower
  • 1 large egg
  • 1/2 cup Parmesan cheese or Mozzarella cheese, grated or shredded
  • 1 teaspoon Italian seasoning , or mix of dried oregano and basil
  • 1/8 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Cooking spray, I use Misto

Cottage Cheese Pizza Crust (Gluten Free)

Ingredients

  • 1 serving cottage cheese
  • grated parmesan
  • seasonings – Italian, garlic powder, salt, pepper
  • pizza sauce
  • toppings of choice (mozzarella cheese, pepperoni, vegetables, greens, chicken sausage, etc.)

Note: there aren’t specific measurements for ingredients other than the cottage cheese because you’ll be adding the parmesan, seasoning, pizza sauce, and toppings based on what you prefer!

No-Yeast Gluten-Free Pizza Crust

Ingredients

  • 2 cups (around 250g) gluten-free all purpose flour or our homemade gluten-free flour (without xanthan gum) *see notes
  • 3 ½ teaspoons aluminum free baking powder
  • 2 teaspoons xanthan gum
  • ¾ teaspoon fine grain kosher salt
  • ¾ cup (or up to 1 cup) warm water
  • 1 Tablespoon light olive oil for brushing, divided
