Have them for breakfast, lunch or even dinner! I had my first batch of waffles a few months ago and they were amazing.

Easy Gluten-Free Pancakes

Ingredients 

  • 2 tablespoons granulated sugar
  • 2 tablespoons vegetable oil
  • 1 egg, Vegan option use Bob’s Red Mill gluten-free egg replacer
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose gluten-free flour*, I like Pillsbury gluten-free flour. Not all gluten-free flours are created equal. You may experience different baking results depending on the gluten-free flour blend you choose.
  • 1/4 teaspoon xanthan gum, (leave out if your flour blend already has it)
  • 1 tablespoon gluten-free baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk, dairy-free/Vegan use almond, cashew, or coconut milk

Fluffy Gluten-Free Pancakes

Ingredients

  • 1 cup gluten-free flour (Bob’s Red Mill 1:1 Gluten-Free Baking Flour recommended) (5 ounces; 142 grams)
  • 2 tablespoons granulated sugar (1 ounce; 28 grams)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup milk (6 ounces; 170 grams)
  • 1 large egg (2 ounces; 56 grams)
  • 2 tablespoons oil or melted butter (1 ounce; 28 grams)
  • ½ teaspoons vanilla extract

  • ¾ cup milk, for a dairy-free option, use plain unsweetened almond, cashew, or coconut milk
  • ½ cup water
  • 1 cup gluten-free all-purpose flour with xanthan gum, I like Pillsbury gluten-free. Not all gluten-free flours are created equal. You may experience different baking results depending on the gluten-free flour blend you choose.
  • ¼ tsp xanthan gum, leave out if your flour already has it
  • 2 tbsp granulated sugar, omit for savory crepes*
  • 1 tsp pure vanilla extract, omit for savory crepes
